Ingredients

  • 2 1/2 lb chicken
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons butter
  • 2 large cloves garlic
  • 3/4 cup sliced pimento stuffed olives
  • 3 tablespoons capers
  • 1 1/2 tablespoons capers liquid
  • 1 tablespoon water
  • 1/2 cup parsley

Instructions

  1. Rinse the chicken and pat dry.
  2. Coat the chicken with a mixture of flour, salt, and pepper.
  3. Brown the chicken in butter in a skillet.
  4. Simmer, covered, for 40 minutes.
  5. Add garlic, sliced pimento-stuffed olives, capers, capers liquid, water, and parsley.
  6. Cook for 3 to 5 minutes or until heated through.
  7. Serve with buttered and parslied new potatoes.
