Rice With Spinach

Ingredients

  • 2 c. fresh spinach
  • 1 small onion, chopped
  • 1/2 to 1 c. parsley
  • 2 c. rice
  • 2 c. College Inn chicken broth
  • butter or oil
  • grated cheese to taste
  • salt and pepper

Instructions

  1. Mix oil, chopped onion, and fresh spinach in a pan. Cook over low heat for 5 minutes until spinach wilts.
  2. Add rice and parsley to the pan, stirring to coat the ingredients evenly.
  3. Pour in chicken broth, cover, and cook until rice is tender, about 15 minutes.
  4. Once cooked, stir in grated cheese, and season with salt and pepper to taste.
  5. If needed, add more broth and cook a few more minutes until flavors meld.
