Rice With Vegetables

Ingredients

  • 3 c. cooked brown rice
  • 1 Tbsp. olive oil
  • 1/2 small onion, chopped
  • 1/2 lb. fresh mushrooms, chopped
  • 1 large green pepper, chopped
  • 4 small zucchini, sliced and quartered
  • 4 Tbsp. tomato sauce
  • 2 Tbsp. salsa
  • 1/2 tsp. oregano
  • 1 Tbsp. no salt seasoning

Instructions

  1. Saute onion, mushrooms, green pepper and zucchini in olive oil.
  2. Add tomato sauce.
  3. Add remaining ingredients; simmer for 15 minutes.
  4. Stir in the rice; heat through for 5 more minutes. Serves 4.
