Rich Rice combines creamy sour cream, mushrooms, spinach, and Swiss cheese in a comforting baked dish, perfect for family dinners or cozy gatherings.

Ingredients

  • 4 cups cooked rice
  • 2 Tbsp butter or margarine
  • 1 onion
  • 8 oz fresh mushrooms
  • 1 Tbsp lemon juice
  • 1 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1/8 tsp ground nutmeg
  • 1 cup sour cream
  • 1 cup finely chopped spinach
  • 1 cup grated Swiss cheese
  • paprika

Instructions

  1. Spoon half of the cooked rice into a buttered, shallow 2-quart baking dish.
  2. Melt the butter in a large skillet over medium heat.
  3. Add chopped onion, sliced mushrooms, lemon juice, salt, white pepper, and ground nutmeg; cook until the onion is soft.
  4. Remove from heat and stir in sour cream.
  5. Spread the mushroom and sour cream mixture over the layer of rice in the baking dish.
  6. Spread chopped spinach over the mixture.
  7. Top with the remaining cooked rice.
  8. Sprinkle grated Swiss cheese over the top.
  9. Dust with paprika.
  10. Bake at 350°F for 30 to 35 minutes or until heated through.
