- Spoon half of the cooked rice into a buttered, shallow 2-quart baking dish.
- Melt the butter in a large skillet over medium heat.
- Add chopped onion, sliced mushrooms, lemon juice, salt, white pepper, and ground nutmeg; cook until the onion is soft.
- Remove from heat and stir in sour cream.
- Spread the mushroom and sour cream mixture over the layer of rice in the baking dish.
- Spread chopped spinach over the mixture.
- Top with the remaining cooked rice.
- Sprinkle grated Swiss cheese over the top.
- Dust with paprika.
- Bake at 350°F for 30 to 35 minutes or until heated through.
