Ingredients

  • 1 stick margarine
  • 1 1/2 cups Minute rice
  • 2 cups diced raw squash
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can cream of mushroom soup
  • 1 1/2 cans water
  • grated cheese

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Melt margarine in a 9 x 13-inch baking dish.
  3. Spread uncooked rice evenly around in the dish.
  4. Layer diced raw squash over the rice.
  5. Sprinkle diced onion over the squash.
  6. Add salt and pepper evenly over the ingredients.
  7. Mix the cream of mushroom soup with water and pour over the mixture.
  8. Cover the dish with foil.
  9. Bake for 1 hour and 15 minutes.
  10. Remove from oven, uncover, sprinkle grated cheese on top.
  11. Return to the oven for an additional 10 minutes until cheese melts.
