Ingredients

  • 2 12 oz. cans of chopped clams with juice
  • 1 tsp. black pepper
  • 6 large potatoes, cut into large cubes
  • 1 pint of heavy cream
  • 1 c. chopped onion, minced
  • 1/2 c. chopped celery, minced
  • 1/2 tsp. minced garlic
  • 2 Tbsp. cooking oil
  • 2 Tbsp. clam base
  • 2 qt. of water

Instructions

  1. In a large pot, add minced onion, chopped celery, minced garlic, black pepper, and cooking oil.
  2. Stir and cook until the onion is tender.
  3. Add the potatoes and clam juice to the pot, setting aside the clams for later.
  4. Add clam base and water, then bring to a boil.
  5. Reduce heat and simmer until the potatoes are soft and tender.
  6. Add the chopped clams and heavy cream to the soup, stirring well.
  7. Heat through and serve hot.
