Ingredients

  • 4 tsp olive oil
  • 5 oz diced bacon
  • 1 clove garlic
  • salt
  • pepper
  • 1 1/4 lb rigatoni
  • 5 eggs
  • 5 Tbsp Parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Saute the diced bacon and crushed garlic until the bacon is browned and fragrant.
  3. Discard the garlic once it is browned.
  4. Meanwhile, cook the rigatoni in boiling salted water until tender but still firm.
  5. Drain the pasta and add it to the skillet with the bacon.
  6. In a bowl, whisk together the eggs, Parmesan, and Romano cheeses.
  7. Remove the skillet from heat and quickly stir in the egg and cheese mixture to coat the pasta evenly.
  8. Season with salt and pepper to taste and serve immediately.
