Ingredients

  • 1 lb Weber sausage
  • 1 small onion
  • 1 cup raw white rice
  • 1 (10 1/2 oz) can chicken broth
  • 1 cup diced tomatoes
  • 1/2 cup sliced mushrooms
  • 1 cup sliced ripe olives
  • 1/4 teaspoon oregano
  • 1/4 teaspoon minced garlic
  • Salt and pepper to taste

Instructions

  1. Cook crumbled sausage until lightly browned.
  2. Add chopped onion and minced garlic; cook until onion is tender.
  3. Stir in rice, then add chicken broth, diced tomatoes, sliced mushrooms, sliced olives, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes until rice is cooked.
  5. Heat thoroughly over low heat before serving.
