Rita's Taco Soup is a hearty, flavorful dish blending ground beef, beans, corn, and spices, perfect for a comforting family meal or casual gathering.

Ingredients

  • 2 lb ground beef
  • 2 cans chili beans
  • 2 cans Mexicorn
  • 1 package taco seasoning
  • 1 small onion
  • 1 can diced tomatoes or Ro-tel
  • 1 can tomato sauce
  • 1 large jar Pace Picante Sauce
  • 1 can black beans
  • 2 stalks celery

Instructions

  1. Saute chopped onions and celery in a little oil until tender.
  2. Add ground beef and cook until browned.
  3. Add chili beans, Mexicorn, diced tomatoes or Ro-tel, tomato sauce, Pace Picante Sauce, black beans, and taco seasoning.
  4. Simmer the soup for about 45 minutes to 1 hour, adding water if the soup is too thick.
