  • 3 c. chicken broth
  • 1/8 tsp. saffron
  • salt

  1. Saute the minced onion in melted butter in a large heavy skillet over medium-high heat until golden brown.
  2. Add the long grain rice to the skillet and mix well, stirring for 1 or 2 minutes, then remove from heat.
  3. Bring chicken broth to a light boil in a saucepan, then add saffron and lightly season with salt.
  4. Add the rice and onion mixture to the boiling broth and mix well.
  5. Bring to a boil again, then reduce heat to a simmer, cover, and cook for 20 minutes or until all the liquid is absorbed.
  6. Just before serving, add lemon peel and fluff the rice with a fork.

Tips & Substitutions

For a richer flavor, consider sautéing the rice with the onions for a few extra minutes before adding the broth. If saffron is unavailable, turmeric can provide a similar color but will alter the taste slightly. Adjust salt to your taste, especially if using low-sodium broth. Experiment with adding peas or other vegetables for added nutrition, like in Rice With Spinach.

Serving Suggestions

Saffron rice complements a variety of dishes, making it an excellent side for grilled meats or fish. It pairs beautifully with Baked Greek Chicken or Em'S Roasted Chicken. For a complete meal, serve alongside a fresh salad or roasted vegetables. Garnish with fresh herbs like parsley for added flavor.

Storage & Reheating

Store leftover saffron rice in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop with a splash of water to restore moisture. Avoid reheating multiple times to maintain the best texture and flavor.
