Delicious roast beef quesadillas with melted cheese, sautéed onions and peppers, perfect for a quick, satisfying lunch or dinner with bold flavors.

Ingredients

  • 6 oz. deli roast beef, thinly sliced
  • 1 small onion, thinly sliced
  • 1/4 cup green bell pepper, chopped
  • 1/2 cup prepared medium salsa, divided
  • 3/4 cup Colby-Jack cheese, shredded
  • 4 flour tortillas, 7-inches in diameter

Instructions

  1. Place the onion and bell pepper in a microwave-safe bowl, cover, and microwave on high for 3 to 4 minutes, stirring halfway through.
  2. Stir in 3 tablespoons of salsa into the cooked vegetables and set aside.
  3. Sprinkle an equal amount of shredded Colby-Jack cheese on each of the four tortillas.
  4. Arrange sliced deli roast beef over the cheese on each tortilla.
  5. Top the roast beef with the vegetable mixture divided evenly among the tortillas.
  6. Fold each tortilla over to close and cook on a skillet or griddle until golden brown and cheese is melted, about 2-3 minutes per side.
