- Stir in 3 tablespoons of salsa into the cooked vegetables and set aside.
- Sprinkle an equal amount of shredded Colby-Jack cheese on each of the four tortillas.
- Arrange sliced deli roast beef over the cheese on each tortilla.
- Top the roast beef with the vegetable mixture divided evenly among the tortillas.
- Fold each tortilla over to close and cook on a skillet or griddle until golden brown and cheese is melted, about 2-3 minutes per side.
