- Rinse the turkey and wipe dry; rub with oil, then season with salt and pepper.
- In a large bowl, combine the seasoned cornbread stuffing mix with oil, chopped celery, minced onion, and minced parsley; stir in broth from cooking giblets.
- Mix lightly until ingredients are well incorporated.
- Loosely stuff the mixture into the turkey's neck and body cavities.
- Skewer the neck skin to the back and tuck the legs under the skin band. Twist the wings under the turkey.
- Place the turkey breast-side up on a rack in a shallow roasting pan.
- Cover the turkey with a tent of foil and roast at 325°F for 3 1/2 to 4 hours, or until a meat thermometer registers 180°F to 185°F.
- Remove the foil during the last 30 minutes of roasting to brown the turkey.
- The cornbread stuffing can be cooked separately during the last 45 minutes of roasting.
