Ingredients

  • 12 to 14 lb turkey
  • 1/2 cup oil
  • salt and pepper
  • 1 (12 oz) package seasoned cornbread stuffing
  • 1 1/2 cups celery, chopped
  • 1 cup onion, minced
  • 2 tablespoons parsley, minced
  • 1 cup broth from cooking giblets

Instructions

  1. Rinse the turkey and wipe dry; rub with oil, then season with salt and pepper.
  2. In a large bowl, combine the seasoned cornbread stuffing mix with oil, chopped celery, minced onion, and minced parsley; stir in broth from cooking giblets.
  3. Mix lightly until ingredients are well incorporated.
  4. Loosely stuff the mixture into the turkey's neck and body cavities.
  5. Skewer the neck skin to the back and tuck the legs under the skin band. Twist the wings under the turkey.
  6. Place the turkey breast-side up on a rack in a shallow roasting pan.
  7. Cover the turkey with a tent of foil and roast at 325°F for 3 1/2 to 4 hours, or until a meat thermometer registers 180°F to 185°F.
  8. Remove the foil during the last 30 minutes of roasting to brown the turkey.
  9. The cornbread stuffing can be cooked separately during the last 45 minutes of roasting.
