Ingredients

  • 1 head cauliflower
  • 2 red onions
  • 1 Tbsp. chopped parsley
  • 2 Tbsp. garlic olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. parmesan cheese

Instructions

  1. Cut the cauliflower into 1-1/2 inch florets.
  2. Cut the red onions into 8 wedges.
  3. Preheat the oven to 475°F (245°C).
  4. In a non-stick roasting pan, mix the cauliflower, onions, garlic olive oil, salt, and 1/4 teaspoon pepper.
  5. Roast for 15 minutes, then toss and roast for an additional 5 to 10 minutes until lightly charred and tender.
  6. Transfer to a platter, top with the remaining 1/4 teaspoon pepper, chopped parsley, and parmesan cheese.
