- Cut the cauliflower into 1-1/2 inch florets.
- Cut the red onions into 8 wedges.
- Preheat the oven to 475°F (245°C).
- In a non-stick roasting pan, mix the cauliflower, onions, garlic olive oil, salt, and 1/4 teaspoon pepper.
- Roast for 15 minutes, then toss and roast for an additional 5 to 10 minutes until lightly charred and tender.
- Transfer to a platter, top with the remaining 1/4 teaspoon pepper, chopped parsley, and parmesan cheese.
