Ingredients

  • 1/2 cup Italian dressing
  • 1-2 Tbsp dried dill weed
  • 1/2 cup chopped onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 (5-5.5 lb) roasting chicken
  • 2 lb potatoes, cut into chunks

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Mix together the Italian dressing, dried dill weed, chopped onion, salt, and pepper until blended.
  3. Place the chicken in a roasting pan, spread dill mixture inside the cavity and over the skin.
  4. Coat the potatoes with the remaining dill mixture.
  5. Arrange the potatoes around the chicken in the roasting pan.
  6. Cover the pan with aluminum foil and roast for 1.5 hours, turning the potatoes occasionally.
  7. Remove the foil and continue roasting until the chicken and potatoes are completely cooked.
