Stuffed haddock offers a delightful combination of tender fish filled with cheesy rice and broccoli, baked to perfection. Perfect for a wholesome, flavorful seafood meal.

Ingredients

  • 1 lb. haddock fillets
  • 2 c. cooked rice
  • 1 c. grated cheese
  • 1 c. boiling water
  • 2 chicken bouillon cubes
  • 1/3 c. margarine
  • 1/3 c. lemon juice
  • 1 tsp. hot sauce
  • 1 pkg. broccoli (optional)

Instructions

  1. Cook the rice until tender.
  2. Mix the cooked rice with grated cheese and optional broccoli while still hot.
  3. Dissolve the chicken bouillon cubes in boiling water to make a broth.
  4. Add lemon juice, hot sauce, margarine, and the bouillon broth to the rice mixture and stir until well combined.
  5. Add half of the sauce to the rice and cheese mixture.
  6. Place 1/3 cup of the rice mixture on each haddock fillet and roll up.
  7. Put the remaining rice and cheese mixture on the bottom of a 9 x 9-inch baking pan.
  8. Place the stuffed haddock fillets on top of the rice in the pan.
  9. Bake at 375°F (190°C) for 25 minutes.
  10. Serve with remaining lemon and butter sauce on the side.
