Ingredients

  • 3 lb boneless loin of pork
  • 3 cloves garlic, thinly sliced
  • 2 to 4 Tbsp dried or fresh rosemary
  • 2 or more Tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp ground black pepper

Instructions

  1. Heat oven to 350°F (175°C).
  2. Make small slits on all sides of the pork and insert garlic slices into the slits.
  3. Rub the meat with olive oil, then season with salt, pepper, and rosemary.
  4. Place the pork on a rack in a roasting pan.
  5. Bake for 1 1/2 to 2 hours until the thermometer reads 160°F (71°C).
  6. Let the pork stand for 15 minutes before carving.
