Ingredients

  • 1 ready-made 9-inch pie crust
  • 1 1/2 cups slivered onion
  • 6 slices turkey bacon, chopped
  • 3/4 cup shredded Swiss cheese
  • 1 cup evaporated milk
  • 2 teaspoons cornstarch
  • 1/8 teaspoon ground nutmeg
  • dash of ground red pepper
  • 2 eggs
  • 2 egg whites
  • 1 tablespoon olive oil

Instructions

  1. Combine slivered onion and chopped turkey bacon in a medium skillet heated with olive oil.
  2. Cook over medium-high heat for 10 minutes until onions are caramelized and bacon is cooked.
  3. Thaw the ready-made pie crust and bake in a preheated 375°F (190°C) oven for 5 minutes.
  4. Spread the cooked onion and turkey bacon mixture evenly in the partially baked pie crust.
  5. Top the onion mixture with shredded Swiss cheese.
  6. In a bowl, whisk together evaporated milk, cornstarch, ground nutmeg, ground red pepper, eggs, and egg whites.
  7. Pour the egg mixture over the cheese in the pie crust.
  8. Bake in the preheated oven at 375°F (190°C) for about 15-20 minutes until the filling is set and lightly golden.
  9. Let cool slightly before serving.
