Delightful nests filled with nuts and topped with fondant eggs, these cookies combine buttery, nutty flavors with a charming presentation perfect for spring celebrations.

Ingredients

  • 1 cup butter or margarine
  • 1/2 cup firmly packed brown sugar
  • 2 eggs, separated
  • 1/2 teaspoon vanilla
  • 2 1/4 cups flour
  • 1 1/2 cups nuts, finely chopped

Instructions

  1. Cream butter with sugar; beat in egg yolks and vanilla.
  2. Stir in flour.
  3. Beat egg whites in a shallow bowl; sprinkle nuts on waxed paper.
  4. Roll dough, one teaspoonful at a time, into balls.
  5. Roll each ball in egg whites, then in nuts.
  6. Place on a cookie sheet.
  7. Press a hollow in the center of each cookie with your finger.
  8. Bake at 350°F for 12 minutes or until firm and lightly golden.
  9. Cool the cookies.
  10. Place a fondant egg in each nest.
