Roll-Out Cookie Recipe

Ingredients

  • 1 c. butter or oleo, softened
  • 1 c. sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 2 tsp. baking powder
  • 3 c. flour

Instructions

  1. Preheat oven to 400°.
  2. In large bowl, cream butter or oleo and sugar with electric mixer.
  3. Beat in egg and vanilla.
  4. Add baking powder and flour (one cup at a time).
  5. Mix after each addition. The dough will be very stiff.
  6. Blend last flour by hand.
  7. Do not chill.
  8. Divide into 2 balls.
  9. On floured surface, roll each ball in circle approximately 12 inches in diameter and 1/8-inch thick. Use cutters as a guide.
  10. Dough should only be slightly thinner than cutter.
  11. Dip cutters in flour before each use.
  12. Bake on ungreased cookie sheet on middle rack of oven for 6 to 10 minutes or slightly browned.
