Ingredients

  • 1/2 lb sausage
  • 6 eggs
  • 12 crackers
  • 6 Tbsp green chilies
  • 1/2 cup grated cheese
  • salt
  • pepper

Instructions

  1. Fry the sausage until cooked and pour off the grease.
  2. Crumble the cooked sausage into small pieces.
  3. Crumble the crackers and add them to the sausage.
  4. Stir in the eggs and mix well.
  5. Cook the mixture in a lightly oiled pan until set, turning once.
  6. Cover the top with grated cheese and place chopped green chilies in the center.
  7. Fold the omelet in thirds and cook until the cheese melts.
  8. Cut into 2-inch pieces and serve.
