Ingredients

  • 4 1/2 to 5 lb. turkey thighs
  • 1 pkg. enchilada sauce mix
  • 6 oz. can tomato paste
  • 1/4 cup water
  • 1 cup Monterey Jack cheese, grated
  • 1/3 cup low-fat yogurt or sour cream
  • 1/4 cup sliced green onions
  • 1/2 cup sliced olives
  • 1 1/2 cups corn chips, crushed

Instructions

  1. Cut each turkey thigh in half and remove the bone and skin.
  2. Place the turkey thighs in the slow cooker.
  3. Combine the dry enchilada sauce mix with tomato paste and water to form a thick mixture.
  4. Spread the sauce mixture over the turkey thighs.
  5. Cover and cook on low for 7 to 8 hours until the turkey is tender.
  6. Turn the slow cooker to high heat.
  7. Add the grated Monterey Jack cheese and stir until the cheese melts.
