  • 2 Tbsp. olive oil
  • 2 garlic cloves
  • 2 medium yellow onions
  • 3 medium red bell peppers
  • 1/4 c. fresh chopped parsley
  • 1 tsp. dried oregano
  • salt to taste
  • 1/2 c. Parmesan cheese
  • 1 (28 oz.) can crushed tomatoes
  • 1 (16 oz.) pkg. shredded Mozzarella cheese

Instructions

  1. Press the frozen pizza dough into an 18 x 13-inch lightly oiled pan.
  2. In a frying pan, heat olive oil and sauté garlic, onions, and bell peppers for a few minutes.
  3. Cover and reduce heat to low, then cook for 20 minutes, stirring occasionally, until the mixture is tender and not watery.
  4. Allow the pepper mixture to cool completely.
  5. Spread half of the mixture lengthwise down the center of the dough.
  6. Sprinkle half of the shredded mozzarella and Parmesan cheese over the mixture.
  7. Fold one side of the dough over the filling.
  8. Repeat with the other side, folding it over the first fold to form a rolled pizza.
  9. Bake in a preheated oven at 375°F for 45 minutes or until golden brown.

Tips & Substitutions

For a twist, try adding cooked Italian sausage or pepperoni to the filling for extra flavor. If you want a vegetarian option, consider incorporating spinach or mushrooms into the vegetable mixture. You can also use store-bought pesto for added richness instead of some olive oil. Ensure the dough is fully thawed for easier handling.

Serving Suggestions

Serve your rolled pizza with a side salad for a complete meal, or pair it with marinara sauce for dipping. A light Italian bean bake complements the dish well. For a refreshing drink, consider a chilled white wine or a sparkling water infused with lemon.

Storage & Reheating

Leftover rolled pizza can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place slices in a preheated oven at 350°F for about 10-15 minutes, or until heated through. This method helps maintain the crust's crispness compared to microwaving.
