Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 3 eggs
  • 1 cup oil
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 2 packed cups grated zucchini
  • 1 cup raisins and/or chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two loaf pans.
  2. In a large bowl, combine flour, salt, baking powder, baking soda, and cinnamon.
  3. Add eggs and oil to the flour mixture and stir until well combined.
  4. Mix in sour cream and vanilla into the batter.
  5. Press some of the excess water out of the grated zucchini and fold it into the batter.
  6. Add raisins and/or chopped nuts, then mix well.
  7. Pour the batter evenly into the two greased loaf pans.
  8. Bake in the preheated oven for 1 hour or until a toothpick inserted into the center comes out clean.
  9. Remove from oven, cool slightly, then remove from pans and serve.
