Ingredients

  • 1 medium eggplant
  • 1/2 cup melted butter or margarine
  • 3/4 cup fine dry breadcrumbs
  • 1/4 teaspoon salt
  • 1 (8 oz.) can spaghetti sauce with mushrooms
  • 1 tablespoon crushed oregano leaves
  • 4 oz. sharp cheese or Mozzarella, shredded

Instructions

  1. Peel the eggplant and cut it into 1/2-inch slices.
  2. Dip each slice in melted butter or margarine, then in a mixture of fine dry breadcrumbs and salt.
  3. Place the coated eggplant slices on a greased baking dish.
  4. Spoon spaghetti sauce with mushrooms evenly over each slice.
  5. Sprinkle crushed oregano leaves and shredded cheese on top.
  6. Bake at 450°F for 10 to 12 minutes until done.
