Ingredients

  • 1 whole fryer chicken
  • 4 sprigs fresh rosemary

Instructions

  2. Carefully insert your fingers between the skin and the meat of the breast, and do the same to the back, thighs, and legs without tearing the skin.
  3. Strip the rosemary leaves from the stems.
  4. Finely chop the rosemary leaves with the garlic and salt.
  5. Push the mixture under the skin and spread it around.
  6. Pepper the inside of the chicken.
  7. Wrap the chicken in plastic wrap and refrigerate overnight.
  8. The next day, unwrap and roast at 350°F for 75 minutes or until done.
