Ingredients
- 1 large chicken ⓘ
- 1 large bell pepper, chopped ⓘ
- 1 large onion, chopped ⓘ
- 3/4 stick margarine
- 5 to 7 oz. vermicelli spaghetti ⓘ
- salt and pepper to taste
- 1 small can English peas, drained
- 1 large can mushrooms, drained ⓘ
- 1 large can Ro-Tel tomatoes, including juice ⓘ
- 1 Tbsp Worcestershire sauce ⓘ
- 1 lb. Velveeta cheese ⓘ
Instructions
- Cook the chicken until tender, then debone and reserve 1 quart of chicken broth.
- Cook the spaghetti in the chicken broth until tender, without draining.
- Saute chopped bell pepper and onion in margarine.
- Add the sautéed vegetables to the cooked spaghetti.
- Add the cooked chicken, drained peas, drained mushrooms, Ro-Tel tomatoes with juice, Worcestershire sauce, and small pieces of Velveeta cheese to the mixture.
- Mix everything thoroughly and pour into one large or two small casserole dishes.
- Bake at 350°F for 20 to 30 minutes until hot and bubbly.
