Ingredients

  • 1 large chicken
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 3/4 stick margarine
  • 5 to 7 oz. vermicelli spaghetti
  • salt and pepper to taste
  • 1 small can English peas, drained
  • 1 large can mushrooms, drained
  • 1 large can Ro-Tel tomatoes, including juice
  • 1 Tbsp Worcestershire sauce
  • 1 lb. Velveeta cheese

Instructions

  1. Cook the chicken until tender, then debone and reserve 1 quart of chicken broth.
  2. Cook the spaghetti in the chicken broth until tender, without draining.
  3. Saute chopped bell pepper and onion in margarine.
  4. Add the sautéed vegetables to the cooked spaghetti.
  5. Add the cooked chicken, drained peas, drained mushrooms, Ro-Tel tomatoes with juice, Worcestershire sauce, and small pieces of Velveeta cheese to the mixture.
  6. Mix everything thoroughly and pour into one large or two small casserole dishes.
  7. Bake at 350°F for 20 to 30 minutes until hot and bubbly.
