Ingredients

  • 3 lb. chili meat
  • 1 medium onion
  • 1 can Ro-Tel tomatoes
  • 4 beef bouillon cubes
  • 2 cups water
  • 1 teaspoon garlic powder
  • 1 teaspoon ground mustard
  • 1 heaping teaspoon leaf oregano
  • 1 1/2 teaspoons cumin seed
  • 3 teaspoons chili powder

Instructions

  1. In a Dutch oven, brown the chili meat and chopped onion in a small amount of grease.
  2. Add the Ro-Tel tomatoes, beef bouillon cubes, and 1 cup of water. Bring to a simmer and cook for 1 hour on medium heat.
  3. Add garlic powder, ground mustard, oregano, cumin seed, chili powder, and an additional 1 cup of water. Stir well.
  4. Simmer the mixture for another 30 minutes.
  5. Add 1/2 cup of flour and cook until the mixture thickens.
  6. Serve hot with grated Cheddar cheese and chopped onion. Also delicious over corn chips.
