Instructions

  3. Cover the bowl and set in a warm place for 1 hour or until the batter doubles in size.
  4. Stir down the batter with a wooden spoon.
  5. Stir in egg yolks, melted butter, sugar, salt, and remaining flour, alternating with remaining milk, until the mixture is almost smooth.
  6. Cover the bowl and let it sit for 45 minutes to an hour or until the batter doubles in size again.
  7. Stir down the batter.
  8. Beat egg whites to stiff peaks and gently fold into the batter.
  9. Pour 1/3 cup of batter onto a lightly greased griddle or frying pan for each pancake.
  10. Fry over medium heat for about 4 minutes, turning once, until golden brown.
  11. Garnish with 1 tablespoon of sour cream on each pancake and roll it up.
