Ingredients

  • 2 c. canned pumpkin
  • 5 beaten egg whites
  • 1 (13 oz.) can skim evaporated milk
  • 1 1/2 c. Sugar Twin
  • 2 tsp. cinnamon
  • 1 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1 box Duncan Hines no cholesterol cake mix
  • 1 c. melted margarine
  • 1 c. chopped nuts

Instructions

  1. Mix the pumpkin, beaten egg whites, skim evaporated milk, Sugar Twin, cinnamon, ginger, and nutmeg well.
  2. Pour the mixture into a Pam-sprayed 9 x 12-inch pan.
  3. Sprinkle the entire box of Duncan Hines no cholesterol cake mix over the top.
  4. Drizzle melted margarine evenly over the cake mix.
  5. Sprinkle chopped nuts over all.
  6. Bake for 45 to 50 minutes at 350°F until set and golden.
