Ingredients

  • eggs
  • tortillas
  • Crisco oil
  • salt and pepper to taste
  • salsa
  • cheese, grated

Instructions

  1. Mix eggs (as many as you need) as if they are scrambled; salt and pepper.
  2. Heat Crisco oil (enough to cover chips) and cut or tear tortillas (I usually cut them into 8 pieces) and cook them in oil until crisp.
  3. Slowly add eggs and mix.
  4. When eggs are almost cooked, add as much cheese and salsa as you like.
