Ingredients

  • 8 cups flour
  • 2 1/2 cups lukewarm milk
  • 2 yeast cakes
  • 1 egg
  • 1 teaspoon saffron
  • 1 cup melted butter
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 30 ground blanched almonds

Instructions

  1. Mix yeast with 1 tablespoon sugar and set aside.
  2. Dry saffron in a warm oven and pound it smooth with a small amount of sugar or dissolve in 1 tablespoon brandy.
  3. Mix lukewarm milk, saffron, sugar, salt, egg, melted butter, and a small amount of flour.
  4. Add yeast mixture and remaining flour; beat with a wooden spoon until smooth and firm.
  5. Sprinkle with flour, cover with a clean towel, and let rise in a warm place until doubled in bulk, about 2 hours.
  6. Turn out on a floured baking board and knead until smooth.
  7. Divide the dough into portions and shape into braided loaves or buns.
  8. Place on buttered baking sheets, cover, and let rise.
  9. Brush the risen dough with a slightly beaten egg.
  10. Sprinkle with ground almonds and coarse sugar.
  11. Bake in a moderately hot oven (375°F) for 15 to 20 minutes.
  12. Bake buns in a hot oven (425°F) for 5 to 10 minutes or until done.
