Ingredients

  • 1 1/2 cups applesauce
  • 1 egg
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 2 tablespoons cocoa
  • 1/2 teaspoon nutmeg
  • 1/2 cup oil
  • 3 to 4 packets sugar substitute
  • nuts (optional)
  • raisins (optional)

Instructions

  1. Combine applesauce, oil, egg, and sugar substitute in a mixing bowl.
  2. In a separate bowl, mix together flour, soda, cinnamon, baking powder, cocoa, and nutmeg.
  3. Add the dry ingredients to the applesauce mixture and stir until well blended.
  4. If desired, fold in nuts and raisins.
  5. Pour the batter into a greased 9 x 5-inch loaf pan.
  6. Bake at 325°F (163°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
