Ingredients

  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup sugar
  • 1/4 cup margarine, melted
  • 2 eggs or egg replacer
  • 4 medium very ripe bananas, mashed
  • nonstick cooking spray

Instructions

  1. Preheat oven to 275°F (135°C).
  2. Mix dry ingredients together well to ensure even dispersion of baking soda.
  3. Add sugar, melted margarine, and eggs (or egg replacer) to the dry mixture.
  4. Stir until combined.
  5. Slowly mix in mashed bananas.
  6. Pour batter into a standard bread pan lightly coated with nonstick cooking spray.
  7. Bake at 275°F (135°C) for 1 1/2 hours.
