Ingredients

  • 4 cups sugar
  • 4 cups pumpkin (from one 2 1/2 can plus 1/2 cup water)
  • 1 cup oil
  • 5 cups sifted flour
  • 1/2 cup nuts (chopped dates or raisins)
  • 4 teaspoons soda
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 teaspoon cloves

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the sugar, pumpkin, and oil until well combined.
  3. Sift together the flour, soda, salt, cinnamon, and cloves.
  4. Gradually add the dry ingredients to the pumpkin mixture, mixing well.
  5. Fold in the nuts, chopped dates, or raisins if desired.
  6. Pour the batter into prepared loaf pans.
  7. Bake for one hour or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool before removing from pans.
