Salmon Brunch Salad

Ingredients

  • 1 cucumber, sliced
  • 1 c halved cherry tomatoes
  • 1/2 minced red onion
  • 2 T capers
  • 1 pkg smoked salmon, sliced in sm pieces
  • 2 eggs, cooked and sliced
  • head of romaine lettuce, chopped
  • Juice of 2 lemons 4-6 T
  • 4 T olice oil
  • salt and pepper to taste

Instructions

  1. Mix cucumber, tomatoe, onion, capers with salmon. Whisk lemon juice, olive oil and salt and pepper. Add egg slices to salad and put on dressing. Toss with croutons. Serve over greens.
