Ingredients

  • 1 large can salmon
  • 1/4 cup finely chopped green pepper
  • 1 1/2 cups mayonnaise
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped onion
  • 6 hamburger buns
  • 12 tomato slices
  • 1/2 cup grated cheese

Instructions

  1. Remove skin from the large can of salmon and drain any excess liquid.
  2. Mix finely chopped onion, finely chopped green pepper, and 1 1/2 cups mayonnaise in a bowl.
  3. Spread the salmon evenly over the split hamburger buns.
  4. Pile the mayonnaise mixture on top of the salmon on each bun.
  5. Place a tomato slice on top of the mayonnaise mixture on each bun.
  6. Mix 1/2 cup mayonnaise with 1/2 cup grated cheese to prepare the topping.
  7. Spread the cheese and mayonnaise mixture over the tomato slices.
  8. Place the buns under a broiler until the topping is puffed and browned.
