Ingredients

  • 4 (3 oz.) cans salmon
  • 1 Tbsp. black pepper
  • 1 c. liquid eggs or 9 whole eggs
  • 1 1/2 c. bread crumbs
  • 1/2 c. green pepper (optional)
  • 1/3 c. parsley
  • 1 tsp. paprika
  • 1 1/2 Tbsp. salt
  • 1 medium onion

Instructions

  1. Drain the salmon cans thoroughly.
  2. Mix salmon, black pepper, liquid eggs, bread crumbs, green pepper (if using), parsley, paprika, salt, and chopped onion in a large bowl until well combined.
  3. Shape the mixture into small patties or use a tablespoon to form hush puppy-sized portions.
  4. Deep-fry the shaped croquettes in hot oil until they are golden brown and cooked through.
