Salmon haystacks offer a savory blend of flaky salmon, buttery sauce, and crispy crumbs, perfect as an elegant appetizer or satisfying main course for seafood lovers.

Ingredients

  • 1 (1 lb) can salmon
  • 1/4 cup butter
  • 2 Tbsp minced onion
  • 1/3 cup flour
  • 1/4 tsp salt
  • 1/4 tsp Tabasco sauce
  • 1 Tbsp lemon juice
  • 1 cup corn flake crumbs

Instructions

  1. Drain the liquid from the salmon into a measuring cup and add milk to make 1/2 cup of liquid.
  2. Melt butter in a skillet and stir in flour to create a thickened mixture.
  3. Add the milk and minced onion to the butter-flour mixture, stirring well.
  4. Mix the sauce into the drained salmon until combined.
  5. Shape the salmon mixture into haystacks of desired height (3 inches for dinner, 1 1/2 inches for hors d'oeuvres).
  6. Roll each haystack in coarse corn flake crumbs.
  7. Place on a baking sheet and bake at 350°F for 20 minutes until golden and heated through.
