Ingredients

  • 2 cups fresh bread crumbs
  • 1/2 cup milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon Tabasco
  • 1/4 teaspoon monosodium glutamate
  • 1/4 teaspoon poultry seasoning
  • 1 (1 lb.) can red salmon
  • Speedy Pickled Peaches (recipe follows)
  • Creamy Pea and Scallion Sauce (recipe follows)

Instructions

  1. Preheat oven to 375°F about 1 hour before serving.
  2. In a large bowl, combine bread crumbs, milk, eggs, salt, Tabasco, monosodium glutamate, and poultry seasoning until well mixed.
  3. Add chunks of drained red salmon to the mixture and mix well with a fork.
  4. Lightly turn the mixture into a greased 9 x 5 x 3-inch loaf pan and smooth the top.
  5. Bake for 45 minutes or until the loaf is firm in the center.
  6. Turn out the loaf and place it right side up on a heated platter.
  7. Serve sliced, garnished with pickled peaches, and topped with Creamy Pea and Scallion Sauce.
