Ingredients

  • 1 (15 oz.) can pink or red salmon
  • 1 egg
  • pepper to taste
  • 1 heaping teaspoon baking powder
  • 1/2 cup flour

Instructions

  1. Drain the salmon and remove any bones.
  2. Reserve the salmon juice.
  3. In a mixing bowl, add the egg to the salmon and mix well.
  4. Stir in the flour until fully incorporated.
  5. In a small bowl, combine 1/4 cup of the reserved juice with the baking powder and beat until foamy.
  6. Pour the foamy mixture into the salmon mixture and stir to combine.
  7. Heat oil in a skillet over medium heat.
  8. Drop the salmon mixture by tablespoonfuls into the hot oil and fry until golden brown on one side.
  9. Turn the patties and cook until browned on the other side.
  10. For small servings, drop by teaspoonfuls and cook similarly, serving with a toothpick.
