Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup toasted, chopped walnuts
  • 1/2 cup dark raisins
  • 2 eggs
  • 1/2 cup warmed half and half
  • 1/2 cup melted butter
  • 2 teaspoons pure vanilla
  • 1/2 cup applesauce

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, salt, baking powder, cinnamon, nutmeg, chopped walnuts, and raisins; set aside.
  3. In a separate bowl, beat the eggs. Add warmed half and half, melted butter, vanilla, and applesauce; mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool for a few minutes before removing from the tin.
