Salmon Roasted

Ingredients

  • 2.2 lbs salmon in 8 pieces
  • salt and pepper
  • 3 red peppers, sliced
  • 2 fennel in wedges
  • (or green beans par boiled 1 minute)
  • 1 T oil
  • Dressing:
  • 2 T oil

Instructions

  1. Set oven to 400 F
  2. Toss vegetables in 1 T oil and salt. Roast on large bake sheet for 5 minutes.
  3. Add salmon and roast another 12 minutes.
  4. Mix together dressing and spread over salmon.
