Ingredients

  • 2 c. cubed fresh pineapple
  • 1/3 c. diced red onion
  • 2 Tbsp. fresh lime juice
  • 2 minced fresh jalapeno peppers
  • 1 Tbsp. brown sugar
  • 1 Tbsp. Triple Sec or frozen orange juice
  • 2 tsp. white wine vinegar
  • 1 Tbsp. chopped cilantro

Instructions

  1. Combine all ingredients in a saucepan.
  2. Simmer the mixture on low heat for about 20 minutes.
  3. Stir occasionally and serve once the flavors meld.
