Ingredients

  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 cup uncooked rice
  • 3 cups water
  • 1 package onion soup mix
  • 1 tablespoon lemon juice
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon ginger

Instructions

  1. Saute chopped celery and onion in a heavy skillet until tender.
  2. Add uncooked rice and cook, stirring frequently, until rice is golden.
  3. Add water, onion soup mix, lemon juice, curry powder, and ginger.
  4. Bring to a boil, then reduce heat, cover, and simmer for 25 to 30 minutes until rice is tender and liquid is absorbed.
