Samoset'S Caesar Salad

Ingredients

  • 1 head romaine lettuce, washed, hand broken and dried
  • 1 clove garlic (leave in)
  • 2 anchovy fillets
  • 1 Tbsp. vinegar
  • 1/2 fresh lemon
  • 2 oz. olive oil
  • 1 egg, coddled
  • 3 Tbsp. Parmesan cheese
  • 1/2 c. croutons
  • fresh pepper

Instructions

  1. Break up garlic and rub in bowl.
  2. Paste anchovies, Worcestershire sauce, vinegar and lemon juice.
  3. Add just egg yolk; mix.
  4. Add mustard; mix again.
  5. Add olive oil; blend at the same time.
  6. Add romaine; toss.
  7. Add croutons and Parmesan cheese; toss again.
  8. Add fresh pepper to taste.
