- Cook the mixed vegetables in the microwave or on the stove and drain.
- In a separate bowl, mix mayonnaise, shredded cheddar cheese, chopped celery, and chopped onions.
- Melt one stick of butter or margarine.
- Crush 14 or more saltine crackers and add to the melted butter, mixing to create a topping mixture.
- Place the cooked vegetables in a casserole dish.
- Add the mayonnaise mixture to the vegetables and stir to combine.
- Pour the melted butter and crushed crackers mixture over the top of the casserole.
- Bake in a preheated 350°F oven for 30 minutes until golden and bubbly.
