Ingredients

  • 2 (10 oz.) boxes mixed vegetables
  • 3/4 cup mayonnaise
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup celery
  • 1 cup onions
  • 14 or more saltine crackers

Instructions

  1. Cook the mixed vegetables in the microwave or on the stove and drain.
  2. In a separate bowl, mix mayonnaise, shredded cheddar cheese, chopped celery, and chopped onions.
  3. Melt one stick of butter or margarine.
  4. Crush 14 or more saltine crackers and add to the melted butter, mixing to create a topping mixture.
  5. Place the cooked vegetables in a casserole dish.
  6. Add the mayonnaise mixture to the vegetables and stir to combine.
  7. Pour the melted butter and crushed crackers mixture over the top of the casserole.
  8. Bake in a preheated 350°F oven for 30 minutes until golden and bubbly.
