Ingredients

  • 6 boneless, skinless chicken breast halves
  • 1 Tbsp. vegetable oil
  • 1/2 tsp. pepper
  • 1/4 tsp. crushed red pepper
  • 1/2 tsp. chili powder
  • 6 slices Monterey Jack cheese
  • 6 Italian rolls
  • 2 Tbsp. margarine
  • lettuce
  • tomato slices

Instructions

  1. Pound chicken breasts slightly to flatten evenly.
  2. Brush both sides with vegetable oil.
  3. Combine pepper, crushed red pepper, and chili powder; sprinkle on both sides of chicken.
  4. Grill chicken over medium heat for 6 to 8 minutes.
  5. Turn chicken and grill 4 to 6 minutes more until tender and no longer pink.
  6. Top chicken with slices of Monterey Jack cheese and allow to melt for about 2 minutes.
  7. Brush rolls with melted margarine and grill until toasted.
  8. Place lettuce, tomato slices, and chicken on the rolls.
  9. Top with picante sauce and serve.
