Ingredients

  • 4 (16 oz) cans clam chowder
  • 2 (16 oz) cans kernel corn
  • 2 (16.5 oz) cans minced clams
  • 1 quart half and half or milk
  • 1/2 onion, chopped
  • 1 tsp olive oil
  • dried or fresh basil to taste
  • tarragon to taste

Instructions

  1. Saute chopped onion in olive oil until translucent.
  2. Pour in the canned clam chowder, corn, minced clams, basil, and half and half into a large pot.
  3. Add tarragon and pepper to taste.
  4. Let the soup simmer until heated through and flavors meld.
  5. Serve hot with oyster crackers.
