Ingredients

  • 2 cups frozen hash brown potatoes
  • 2 tablespoons chopped onion
  • 2 tablespoons margarine
  • 1 cup shredded sharp Cheddar cheese
  • 1 pound cooked and drained sausage
  • 4 ounces sliced fresh or canned mushrooms (optional)
  • 4 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked pepper

Instructions

  1. Fry potatoes and onions in margarine until golden brown. Place in a greased 8 or 9-inch glass baking dish.
  2. Top with shredded cheddar cheese. Crumble cooked sausage and spread over the cheese; add sliced mushrooms if using.
  3. In a bowl, beat eggs with milk, salt, and pepper. Pour this mixture over the sausage and vegetables.
  4. Bake at 350°F for 30 to 35 minutes until eggs are set and golden on top.
