Ingredients

  • 1 large can sauerkraut, drained and chopped
  • 2 cups grated Cheddar cheese
  • 2 tablespoons chopped pimento
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped green pepper
  • 1 hard-boiled egg, chopped
  • 1/2 cup dry, very fine bread crumbs
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1 tablespoon sugar

Instructions

  1. Combine all ingredients and form into balls.
  2. Prepare frosting by blending 8 ounces cream cheese with 2 tablespoons milk until smooth.
  3. Spread the frosting on the sauerkraut balls.
  4. Garnish each with olives and parsley.
  5. Refrigerate overnight to allow flavors to meld.
